Kale

When you have a vegetable patch in the garden or an allotment you're going, from time to time, get a surplus of something or other. Hopefully it's something that can be frozen or pickled or turned into jam, but occasionally it isn't - or, as is the case at the moment due to tomatoes and runner beans, there just isn't space in the freezer.

So, I'm working my way through a seemingly never-ending supply of kale. I'm not fond of it just boiled, as you might cook cabbage or broccoli, which leads to some interesting experiments.

I like to add it, much the way I would spinach, to dishes with strong flavour, such as stir fries, chillies, curry, goulash, tomato dishes for pasta, with bacon chops in an apple juice sauce, and both in and shredded on top of enchiladas.

My favourite way though is none of these but roasted - with oil and spices - to make Chinese 'crispy seaweed'.

Lunch from the Lottie #8

Went down to the lottie this week and found salad leaves and radishes so back to salads - with cabbage, tiny tomatoes, apple and pickled red cabbage.
Even managed an almost home-grown dinner - potatoes, leeks, kale and parsnips but not the pork!

Homegrown, homemade minestrone

Coming back wet and cold from the allotment, I decided soup was the best thing for lunch - and with one bag full of broad beans and another of peas, thought it best to use at least some of them.

I wasn't quite sure what I was making at the start - I podded some broad beans and started cooking them, then added some of last year's tomatoes from the freezer. I wondered about making chilli at this point so added a couple of my dried chillies and a small courgette - from the polytunnel at the allotment. Then thought about the peas and kale I'd brought home so added them instead and called it minestrone.
Normally I'd add carrots but I'd decided by this point to only use my homegrown produce, though I did add some chopped up leaves from shop-bought celery.
Unfortunately, hubby was late back for lunch and the kale overboiled a bit and looked bedraggled - still, it tasted lovely!
